Thank you for the link to your web site. It looks like you are doing fun projects.
One great choice for coating foam dome shells is GFRC Glass Fiber Reinforced Concrete.
I have not met these guys but I do know they are familiar with GFRC and in particular using PVA
fibers in the mix.

With PVA, you pre-batch your fiber into the mix instead of chopping the fibers since PVA doesn't
chop well.
A company in Australia is producing pie shaped dome segments for assembly on site. Their web site
shows most of their older work before segments:

I have heard a rumor that there is a company in the North East USA doing something similar but I
don't know any more.
